The great shepherd of Bornholm

Published on September 29, 2015 by alan egan

Though no trees grow right up to heaven, they would try, unless Jan Seerup, a shepherd, did not have his 600 ewes and 400 lambs grazing on the grass around the historic ruins of Hammershus. Jan himself call this “meaty forestry” and the meat actually tastes a little of the food the animals have been feeding on, e.g. wild garlic and native grasses, and perhaps even a tiny whiff of fantastic view the lambs could enjoy whilst they graze. These sheep are a cross breed between Gotland wool sheep and the Dutch texel. Much of the meat is delivered to local restaurants, but private customers can also buy it in The Bornholm Farmyard Store, where you can also buy lamb sausages and other ‘charcuterie’ goods.
